About Us

Aqua Grille is cozy waterfront bistro and bar with dining on an all weather, open air deck overlooking both the Sandwich Marina and the Cape Cod Canal, a favorite eating and drinking spot for locals as well as visitors for its colorful location with fantastic views. 

 Much of the seafood served at Aqua Grille comes right off the fishing boats that dock within steps to the Aqua Grille along the Cape Cod Canal and the affordable new American menu is well rounded and delivers with local freshness and worldly flavors. 

The Aqua Grille is owned and managed by the Zartarian Family and executive chef Gert Rausch. The Zartarain family has owned and managed Hyannis’ renowned Paddock Restaurant for 41 years, Aqua Grille joining the family in 1988.

Chef/owner,Gert Rausch (see our bouilliabase podcast) adds 35 years of expertise gleaned from the diverse culinary cultures in which he has trained and worked. His cooking is influenced by the the popular cuisines of Germany, Switzerland, Italy, Asia, Thailand, the Caribbean and the four corners of America. 

Featured in the popular PBS Series, "Great Chefs of the West" as well as on CNN, while executive chef at the once famous "Courtyard" in Austin Texas, Gert Rausch gained recognition and respect from the best in the industry and was featured in Food and Wine, Gourmet, Esquire and Texas Monthly magazines in addition to the New York Times.
